Coconut oil, or copra oil, is an edible oil extracted from the kernel or meat of mature coconuts harvested from the coconut palm (Cocos nucifera). The main nutrients in coconut oil are two acids: lauric acid (this is also found in breast milk) and capric acid. It is a very stable oil, difficult to oxidize due to its saturated fat content.
